A Flavorsome Vegan Recipe Made with Green Bananas

This next banana bread recipe is composed only of vegetarian or vegan ingredients. Most prominent is the vegan margarine which will not always be available in all the parts of the world. If you're unable to find this in your local greengrocer or vegan specialty store, then a good substitute will be simple vegetable oil. Saba bananas are also known as cardaba bananas in some places in the world. It's also called Biu gedang saba, Pisang Nepah, Pisang Kepok, Kluai Hin, Opu-'ulu, and Dippig. This is a thick and wide type of banana, roughly 8 to 13 cm long and 2.5 to 5.5 cm in diameter, and is generally found in Asian countries. So if you're from the East, then you know precisely what is needed here. It is always a pleasure making one's own food, and with this Vegan Banana Bread Recipe , the product also happens to be healthy.

Ingredients:

- 1/3 c of vegan margarine

- 1/2 c of sugar

- 2 c of flour

- One and a half teaspoons of baking powder

- 1/2 tsp of bicarbonate of soda

- 2 ripe saba bananas, mashed

- Half a cup of soy milk

- One teaspoon of vanilla

- 1/2 c of chopped cashew nuts

Preparation:

- Preheat the oven to 350 F.

- Cream together the vegan margarine (or vegetable oil) and sugar; then stir in the flour, baking powder and sodium bicarbonate.

- Add the remainder of the ingredients and mix thoroughly.

- Pour into a lightly oiled baking pan and bake for about an hour or just till the cake springs back when lightly touched.

- Remove the bread pan from the oven and let it cool for approximately ten minutes.

- Remove the bread from the bread loaf pan and allow it to cool completely on a wire cooling rack.

- Once the cake is completely cool, spread on some Avocado Frosting for a tantalizing fusion of taste and texture.

Avocado Frosting

Ingredients:

- 8 oz of avocado meat (about 2 small to medium avocados)

- Two teaspoons of lemon juice

- One (1) lb. of sifted confectioner's sugar

- Half a teaspoon of lemon extract

Directions:

- Peel and pit the avocados, then mash the meat.

- Put the avocado meat into a large mixer bowl together with the lemon juice and beat until creamy and light in color (approximately three minutes).

- Add the sifted confectioner's sugar, 1 teaspoon at a time, and beat till smooth.

- Add the lemon extract and continue mixing to combine all the ingredients completely.

- Spread evenly on top of the Vegan Banana Bread.
